Diabetic Recipes : Barley and Black Bean Salad
Fixings:
1 cup uncooked fast cooking pearl grain
1 (15-ounce) can dark beans, flushed and depleted
1 16 ounces grape or cherry tomatoes, split
1/2 cup finely cleaved green chime pepper
1/2 cup (2 ounces) Monterey Jack cheddar with jalapeƱo peppers, cut into 1/4-inch 3D shapes
1/3 cup lemon juice
2 tablespoons olive oil
1 teaspoon salt
3/4 cup new cilantro leaves (discretionary)
1/8 teaspoon ground red pepper (discretionary)
Guidance:
Cook grain as per bundle headings, overlooking salt. Channel grain in a colander, and wash with cold water until totally cooled.
Join dark beans, next 6 fixings, and, whenever wanted, cilantro and red pepper in a medium bowl. Add grain to dark bean combination; throw delicately. Appreciate it !!!
